Rustic Apple Cinnamon Pancakes

  • 1 whole Apple
  • 1 cup Whole Wheat Flour
  • 3/4 cups Oat Flour
  • 2 Tablespoons Brown Sugar
  • 1/2 teaspoons Salt
  • 1 teaspoon Cinnamon, Plus Extra For Sprinkling
  • 1/4 teaspoons Nutmeg
  • 2 teaspoons Baking Powder
  • 6 Tablespoons Unsweetened Applesauce
  • 1/2 cups Milk
  • 1 Egg
  • 1/4 cups Chopped Walnuts (optional)

Directions

    Heat pancake griddle to medium heat, no higher than 300°F.

    Slice the apple into rounds no more than 1/4-inch thick, and remove the bits of core in the center of the slices. Place the apple slices on the hot griddle-several minutes on each side-until they soften but do not become limp. Remove from heat and cut into bite-sized pieces.

    In a bowl combine the apple pieces with the remaining ingredients. Scoop batter by the 1/2 cup onto the griddle. Spread out with a fork and sprinkle with cinnamon. Cook until lightly browned on each side. Sprinkle with cinnamon again before serving. Enjoy!
