Rustic Apple Cinnamon Pancakes

- 1 whole Apple
- 1 cup Whole Wheat Flour
- 3/4 cups Oat Flour
- 2 Tablespoons Brown Sugar
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon, Plus Extra For Sprinkling
- 1/4 teaspoons Nutmeg
- 2 teaspoons Baking Powder
- 6 Tablespoons Unsweetened Applesauce
- 1/2 cups Milk
- 1 Egg
- 1/4 cups Chopped Walnuts (optional)
Directions

1Heat pancake griddle to medium heat, no higher than 300°F.

2Slice the apple into rounds no more than 1/4-inch thick, and remove the bits of core in the center of the slices. Place the apple slices on the hot griddle-several minutes on each side-until they soften but do not become limp. Remove from heat and cut into bite-sized pieces.

3In a bowl combine the apple pieces with the remaining ingredients. Scoop batter by the 1/2 cup onto the griddle. Spread out with a fork and sprinkle with cinnamon. Cook until lightly browned on each side. Sprinkle with cinnamon again before serving. Enjoy!
