  • 2 pounds unpeeled baking potatoes, quartered lengthwise
  • 1 garlic head, peeled
  • 3/4 cup hot 1% low-fat milk
  • 1 1/2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

    Place potatoes, and garlic head in a saucepan filled with water to cover; bring to a boil. Reduce heat, and simmer 15 minutes or until potatoes are tender. Drain and transfer to a bowl; mash with hot milk, melted butter, salt, and pepper.
