Rustic Minestrone Soup

Ingredients
- 2 tablespoons olive oil
- 1 leek sliced
- 1 red onion sliced
- 2 carrots peeled, halved and sliced
- 2 stalks celery sliced
- 2 potatoes peeled and diced
- 1 zucchini quartered and sliced
- 1 handful mushrooms sliced
- 4 cups stock
- 14 ounces chopped tomatoes
- 2 1/2 ounces pasta tubetti
- 14 ounces cannellini beans drained and rinsed
- 5 1/2 ounces cooked ham shredded
Directions

1Heat oil in a saucepan, add vegetables and gently saute for 5 mins.

2Add stock and tomatoes and bring to a boil. Turn down heat and simmer gently for 20 mins. Add pasta and simmer for 10 mins. Add cannellini beans and ham and heat through. Ladle into bowls and serve.
