- 4 egg whites
- 1 2/3 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. sugar
- 1 Tbsp. poppy seed
- 1/2 c. vegetable oil
- 1/2 c. orange juice
- 2 tsp. grated orange rind
Directions

1Preheat oven to 350°.

2Cover bottom of 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with nonstick cooking spray.

3In small mixing bowl, beat egg whites with electric mixer until stiff peaks form. Set aside.

4Combine flour, baking powder, salt, sugar and poppy seed in a large mixing bowl.

5Add oil and orange juice; beat with mixer at medium speed until batter is smooth.

6Batter will be thick.

7Add orange rind and 1/3 of egg whites; stir gently.

8Fold in remaining egg whites.

9Pour batter into prepared pan.

10Bake for 45 minutes, or until toothpick comes out clean.

11Cool in pan for 10 minutes.

12Remove and cool on wire rack.
