- 18 grams salt
- 30 grams sugar
- 90 grams butter
- 300 grams water at 14C
- 400 grams Rye flour
- 350 grams bread flour
Directions

1pour all ingredients together Into mixer EXCEPT Salt,

2Work with slow speed for 4 Minutes / until it turn into a smooth dough.

3add in Salt let it continue to work for another 6 Minutes Until the temperature of the dough being rised between 25 to 29C

4wrap the dough With plastic flim.

5let it prove for 30 minutes in room temperature

6divide the dough into 3 equal pieces, shape it and let It sit for another 40 minutes.

7preheat Oven at 200C put in the bread let it cook for 30 minutes
