Ingredients

  • 3 tablespoons olive oil or coconut oil
  • 7 15/16 ounces paneer or haloumi
  • 1/2 cup onions
  • 2 garlic cloves
  • 1 butter tblspn
  • 1 1/2 teaspoons Garam Masala
  • 1/4 teaspoon grated nutmeg freshly, or 1/2 tsp dried ground nutmeg
  • 2 teaspoons peeled fresh ginger finely grated
  • 6 2/3 cups baby spinach bags of
  • 2 cream tblspns, heavy/pure cream
  • 2 teaspoons lemon juice
  • salt

Directions

    Heat 2 tablespoons of oil in large frypan a. Cube the paneer or halloumi, and cook over medium heat until golden brown on all sides. Transfer to a plate.

    Add the remaining oil and gently saute the onion and garlic and giner until the onion is softened, about 5 minutes

    Add the butter, garam masala and nutmeg, and cook,stirring for 1 minute .

    Add the spinach in batches, stirring often untilk spinich wilts and is tender

    Stir in the cream and lemon juice, then add back in the paneer or haloumi.
