  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup uncooked long-grain white rice
  • 1/4 teaspoon saffron threads, crushed
  • 1/8 teaspoon salt
  • 1 (14-ounce) can fat-free, lower-sodium chicken broth
  • 1 tablespoon chopped fresh cilantro (optional)

Directions

    Heat oil in a medium saucepan over medium-high heat. Add garlic; saute 30 seconds or until fragrant. Add rice; saute 1 minute. Stir in saffron, salt, and broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed. Remove from heat; fluff with a fork. Sprinkle with cilantro, if desired.
