- 3 Tbsp. olive oil
- 1 small onion, peeled and chopped
- 3 cloves garlic, mashed
- 3 c. chicken broth
- 1/2 tsp. crumbled saffron
- 1 1/2 c. uncooked rice
- salt to taste
Directions

1Heat oil in 2-quart saucepan.

2Saute onion and garlic until onion is soft.

3Add broth and saffron and bring to a boil.

4Stir in rice and salt.

5Cook over medium-high heat, uncovered, for 10 minutes.

6Cover and cook over low heat for 20 minutes.

7Turn rice and cook 10 minutes more.
