Saffron Rice Supreme

Ingredients

  • 1/3 c. almonds, blanched
  • 1 1/2 tsp. coriander (whole)
  • 1 1/2 tsp. cumin (whole)
  • 1/2 c. yellow raisins
  • 1/2 tsp. saffron threads
  • 1/2 c. butter
  • 4 c. cooked rice
  • salt and pepper to taste

Directions

    Split each almond into 2 halves.

    Using mortar and pestle, crush the cumin, coriander and saffron together.

    Soak the raisins in hot water for a few minutes and drain.

    Saute all of these ingredients for a few minutes in the butter.

    Add the cooked rice and toss to color the rice and coat each grain with butter.

    Add salt and freshly ground pepper to taste.
