- 4 tablespoons sago
- 1 14 cups milk
- 1 12 teaspoons butter
- 12 cup sugar
- 1 cup raisins
- 1 cup soft breadcrumbs
- 12 teaspoon bicarbonate of soda
- 1 teaspoon lemon essence
- 1 pinch salt
Directions

1Place sago in a bowl and pour milk over and leave overnight or for 8 hours in fridge.

2Put a large saucepan with a trivet at the bottom with enough water so the pudding basin sits about 1/3 above the water level.

3Combine butter and sugar add the dry ingredients and stir thoroughly.

4Stir in the lemon essence and the bicarb soda into the milk-sago mixture.

5Add the milk-sago mixture to the other ingredients and mix thoroughly.

6Place into a greased pudding basin.

7Make sure the water is boiling and gently place the pudding basin in the saucepan and boil for 21/2 hours.

8Check the water from time to time and add more boiling water, not cold.

9Once cooked let sit for 10 mins then turn out and slice into wedges.

10Serve with custard or cream.
