- 2 lb. ground chuck
- 3/4 c. water or a little less
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1/2 to 3/4 tsp. mustard seed
- 1 tsp. cracked peppercorns
- 1 1/2 Tbsp. curing salt
- 1 Tbsp. liquid smoke flavoring
Directions

1Break up meat in bowl.

2Combine rest of ingredients.

3Stir these into meat with hands.

4Blend well.

5Refrigerate 24 hours. Stir again.

6Form into 2 (12-inch) loaves.

7Wrap in aluminum foil. Refrigerate 24 hours.

8Unwrap.

9Place on upper part of broiler pan with water in lower part of pan.

10Bake 1 1/2 hours at 350°.

11Cool thoroughly before sampling.
