Ingredients

  • 2 lb. hamburger
  • 1/4 tsp. garlic powder
  • 1 Tbsp. mustard seed or dry mustard
  • 1 Tbsp. liquid smoke
  • 3/4 c. water
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. fennel seed
  • 2 Tbsp. Tender Quick cure

Directions

    Mix dry ingredients, add water and liquid smoke.

    Mix well. Divide in 2 portions, making 2 rolls 2 to 2 1/2 inches in diameter.

    Roll in foil.

    Refrigerate 24 hours.

    Unroll and bake on rack 1 hour at 350°.

    Shut off oven and leave in oven 20 minutes to drain fat.

    Roll in new foil.

    Slice as desired, when wanted.
