  • 5 lb. hamburger or 2 1/2 lb. hamburger and 2 1/2 lb. ground deer meat
  • 5 tsp. hickory smoke salt
  • 2 1/2 tsp. mustard seed
  • 1/2 tsp. garlic powder
  • 2 1/2 tsp. black pepper
  • 2 Tbsp. whole peppercorns
  • 1 Tbsp. Worcestershire sauce
  • 2 1/2 tsp. Morton Tender Quick salt (can substitute)

Directions

    Mix all ingredients together thoroughly.

    Refrigerate for 24 hours (during this time, be sure to re-mix at least 5 times).

    Make into 3 rolls.

    Cook on rack in oven at 50° for 8 hours.
