Salmon And Rice

  • 1 lb. rice
  • 2 cans salmon (red)
  • 3/4 bottle minced onions
  • 6 slices bacon

Directions

    Cook rice as usual, using a little less water.

    While rice is cooking over a medium fire, fry bacon.

    Remove bacon from pan and add minced onions to bacon drippings.

    Cook minced onions until golden.

    Add salmon to onions, chopping it up in frypan until pieces are small.

    Rice should be cooked just until water is boiled off.

    Add salmon, mix in with rice.

    Cook under low fire until done.

    Fried or boiled okra goes excellent with this dish.

    Crumble bacon over the salmon and rice.
