- 1 lb. rice
- 2 cans salmon (red)
- 3/4 bottle minced onions
- 6 slices bacon
Directions

1Cook rice as usual, using a little less water.

2While rice is cooking over a medium fire, fry bacon.

3Remove bacon from pan and add minced onions to bacon drippings.

4Cook minced onions until golden.

5Add salmon to onions, chopping it up in frypan until pieces are small.

6Rice should be cooked just until water is boiled off.

7Add salmon, mix in with rice.

8Cook under low fire until done.

9Fried or boiled okra goes excellent with this dish.

10Crumble bacon over the salmon and rice.
