- 1 (8 ounce) salmon fillet
- 1/4 cup chopped assorted fresh herbs
- Salt and pepper
- 8 tablespoons fine quality extra-virgin olive oil, plus more, for garnish
- 1/4 cup white wine
- 1/4 cup chicken broth
Directions

1Preheat oven to 425 degrees F.

2Place clean salmon fillet on an oven-proof pan.

3Spread fresh herbs on top of fillet and season with salt and pepper.

4Pour olive oil all over the fish, add white wine and chicken broth.

5Bake in oven until fish is cooked through, about 8 to 10 minutes.

6Remove salmon to a serving dish and reduce the sauce to desired consistency.

7Pour sauce over the fish and drizzle with olive oil.
