- 1 lb. can salmon
- 1/2 c. flour
- 1 egg
- 1 tsp. baking powder (heaping)
Directions

1Heat oil in small saucepan while preparing salmon.

2Pan should be 1/2 full of oil.

3Drain salmon, saving juice.

4Add flour and egg to salmon.

5Add heaping teaspoon baking powder to salmon juice. Let foam 30 seconds, then pour back over salmon.

6Drop by teaspoons into oil; fry until brown.

7Serves 4.
