Ingredients

  • 2 pounds skinless salmon
  • 1/2 medium vidalia onion
  • 2 large eggs
  • 3 tablespoons matzo meal or flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon ancho chile powder
  • 1/2 cup bbq sauce

    Chop salmon in the food processor into small chunks

    Add finely chopped onion, eggs, matzo meal and seasonings
  3. 3
    Mix all ingredients until completely incorporated
  4. 4
    Form into 6 oz patties

    Wrap each patty in wax paper and refrigerateor a few hours

    Cook the patties on a hot grill

    Serve with chipotle mayonnaise, caramelized onions, sauteed mushrooms, homemade pickles and sliced beefsteak tomatoes.
