Ingredients
- 2 pounds skinless salmon
- 1/2 medium vidalia onion
- 2 large eggs
- 3 tablespoons matzo meal or flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground pepper
- 1 teaspoon ancho chile powder
- 1/2 cup bbq sauce
Directions

1Chop salmon in the food processor into small chunks

2Add finely chopped onion, eggs, matzo meal and seasonings

3Mix all ingredients until completely incorporated

4Form into 6 oz patties

5Wrap each patty in wax paper and refrigerateor a few hours

6Cook the patties on a hot grill

7Serve with chipotle mayonnaise, caramelized onions, sauteed mushrooms, homemade pickles and sliced beefsteak tomatoes.
