  • 1/2 c. nonfat mayonnaise dressing
  • 1/4 c. grated Parmesan cheese
  • 1/4 c. vegetable broth
  • 2 tbsp. lemon juice
  • 1 tbsp. chopped fresh chervil
  • 1 tbsp. red wine vinegar
  • 1 clove garlic
  • 4 anchovy fillets
  • 1/4 tsp. kosher salt
  • 1/4 tsp. Freshly ground pepper
  • 4 center-cut salmon fillets
  • 4 clusters cherry tomatoes on the vine
  • Olive oil cooking spray
  • 1/2 tsp. kosher salt
  • 1/2 tsp. Freshly ground pepper
  • 2 small hearts-of-romaine lettuce
  • 13 c. nonfat garlic croutons (optional)
  • Chervil or parsley leaves (optional)

    Dressing: Whisk dressing ingredients in a small bowl; set aside.

    Prepare an outdoor grill with a medium-hot fire or preheat a stovetop grill pan over medium heat.

    Salad: Lightly coat fillets and tomato clusters with cooking spray, and season with salt and pepper.

    Grill salmon 8 minutes, turning once, clusters 2 minutes, or until lightly charred and skins start to split.

    Place a lettuce half, cut side up, on 4 plates; drizzle each with 3 tablespoons of the dressing.

    Place a salmon fillet on top of lettuce.

    Surround with cherry tomato clusters and croutons.
