Ingredients
- 10 oz chunk salmon (skinless boneless)
- 2/3 cup Bread crumbs
- 1 egg (beaten)
- 1/2 red bell pepper (chopped)
- 1 tbsp Chopped green onions
- 1 tbsp old bay seasoning
- 1 tbsp dill
- 1 tsp Franks red-hot sauce (or any cayenne pepper sauce)
- 1/2 Lemon (zest only)
- 1 vegetable oil (for frying)
Directions

1In medium bowl mix together salmon and bread crumbs.

2Beat 1 egg and add to salmon mix along with the rest of the ingredients (except oil) adding more bread crumbs of mixture is too wet.

3Form 3 inch long patties about an inch thick, should get about 4 patties.

4Heat oil in a large skillet over medium high heat.

5Enough so that about a half an inch of oil covers the bottom of skillet.

6Fry each patty for about 3 minutes per side or until golden brown.

7Transfer to a plate lined with a paper town to let cool.

8Serve with your favorite tartar sauce.
