Salmon Cakes

Ingredients

  • 1 (15 1/2 oz.) can pink salmon or red salmon
  • 2 large eggs, beaten
  • salt and pepper to taste
  • 1 medium onion, finely chopped
  • 1 1/2 Tbsp. all-purpose flour
  • 2 Tbsp. butter

Directions

    Drain salmon and break it apart with fork.

    Add eggs, salt and pepper to taste, the onion and just enough flour so that the mixture is not juicy.

    Shape into patties and fry in the butter, turning once, until brown on both sides, about 8 minutes.
