- 3/4 c. mashed cold potatoes
- 1/2 box crushed saltine crackers
Directions

1Debone salmon and remove skin coating.

2Mash salmon.

3Mix in beaten eggs and mashed potatoes.

4Roll into oyster size oblong shape.

5Roll in crushed crackers.

6Fry quickly on both sides in fresh Crisco oil.

7Drain on paper towels.

8Makes 12 to 13 large rolls.
