- 1 lb. potatoes, peeled and sliced
- 1/2 tsp. salt
- 1 (15 1/2 oz.) can salmon or 2 (7 oz.) cans tuna, drained
- 1 egg
- 1/4 c. mayonnaise or salad dressing
- 1/4 c. chopped green onions
- 3 Tbsp. chopped fresh parsley
- 2 Tbsp. fresh lemon juice
- 1/4 tsp. each: pepper and salt
- 1/4 c. all-purpose flour
- 2 Tbsp. milk
- 1 egg
- 1 1/2 c. fresh bread crumbs
- 2 Tbsp. butter or margarine, divided
Directions

1Boil potatoes 20 to 30 minutes with 1/2 teaspoon salt and water to barely cover.

2Drain and mash.

3Combine first 9 ingredients in a bowl.
