- 4 strips of bacon, cooked, save fat
- 1/4 c. minced onion
- 1 egg
- 1/2 c. mayo
- 2 tsp. mustard
- 1/2 tsp. sugar
- zest of half a lemon
- 14 oz. canned salmon
- 1 cooked potato, peeled and fluffed
- 1/4 c. breadcrumbs
- 2 Tbsp. parmesan
- black pepper/old bay
- vegetable oil
Directions

1Heat bacon fat. Add in onions. Put in large bowl after cooked.

2In bowl of onion, add crumbled bacon, egg, mayo, mustard, sugar, and zest. Stir. Add salmon, potato, crumbs, parmesan, and pepper/old bay.

3Form about 12 patties.

4Heat oil over medium heat, fry 5 minutes per side.
