  • 4 strips of bacon, cooked, save fat
  • 1/4 c. minced onion
  • 1 egg
  • 1/2 c. mayo
  • 2 tsp. mustard
  • 1/2 tsp. sugar
  • zest of half a lemon
  • 14 oz. canned salmon
  • 1 cooked potato, peeled and fluffed
  • 1/4 c. breadcrumbs
  • 2 Tbsp. parmesan
  • black pepper/old bay
  • vegetable oil

Directions

    Heat bacon fat. Add in onions. Put in large bowl after cooked.

    In bowl of onion, add crumbled bacon, egg, mayo, mustard, sugar, and zest. Stir. Add salmon, potato, crumbs, parmesan, and pepper/old bay.

    Form about 12 patties.

    Heat oil over medium heat, fry 5 minutes per side.
