- 1 (14 3/4 oz.) can pink salmon
- 1/2 c. saltine cracker crumbs
- 1/8 c. cornmeal
- 1 large egg, slightly beaten
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1Drain salmon.

2Reserve liquid (set aside).

3Remove skin; flake salmon with fork and set aside.

4Combine cracker crumbs and reserved liquid.

5Let stand 5 minutes (or until liquid is absorbed); stir in salmon, cornmeal and next 3 ingredients.

6Shape into patties.

7Fry in hot oil on medium heat until brown, turning once.

8Drain on paper towel.
