Salmon Casserole

  • 4 Tbsp. margarine
  • 4 Tbsp. flour
  • pepper
  • 1/2 tsp. onion salt
  • 1/4 tsp. salt
  • 4 egg yolks, well beaten
  • 1 (7 3/4 oz.) can salmon, drained
  • 4 egg whites
  • 1/4 tsp. cream of tartar

Directions

    Melt margarine in pan; stir in flour, pepper, salt and onion salt.

    Gradually add milk or juice from salmon; cook over medium heat, stirring constantly.

    Remove from heat; beat slowly into egg yolks; stir in salmon.

    Beat egg whites with cream of tartar until stiff, but not dry.

    Fold salmon into eggs.

    Pour into greased 1 1/2-quart souffle dish.

    Bake at 350° for 50 to 60 minutes.
