- 4 Tbsp. margarine
- 4 Tbsp. flour
- pepper
- 1/2 tsp. onion salt
- 1/4 tsp. salt
- 4 egg yolks, well beaten
- 1 (7 3/4 oz.) can salmon, drained
- 4 egg whites
- 1/4 tsp. cream of tartar
Directions

1Melt margarine in pan; stir in flour, pepper, salt and onion salt.

2Gradually add milk or juice from salmon; cook over medium heat, stirring constantly.

3Remove from heat; beat slowly into egg yolks; stir in salmon.

4Beat egg whites with cream of tartar until stiff, but not dry.

5Fold salmon into eggs.

6Pour into greased 1 1/2-quart souffle dish.

7Bake at 350° for 50 to 60 minutes.
