Salmon Chowder

Ingredients

  • 1 (15 oz.) can salmon
  • 1 clove garlic
  • 3 Tbsp. margarine
  • 1/2 c. each: chopped onion, celery and green pepper
  • 1 c. each: diced potatoes and carrots
  • 2 c. chicken broth
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • 1/2 tsp. thyme
  • 1/2 c. frozen peas
  • 1 can cream-style corn
  • 1 (12 oz.) can evaporated milk
  • minced parsley

Directions

    Drain and flake salmon, reserving liquid.

    Saute onion, celery and pepper.

    Add potatoes, carrots, salmon liquid, broth and seasonings.

    Cover and simmer 20 minutes or until veggies are tender.

    Add peas and cook 5 minutes longer.

    Add salmon, corn and milk.

    Heat thoroughly.

    Sprinkle with minced parsley.
