Salmon Chowder

Ingredients
- 1 c. smoked salmon
- 1 c. raw salmon
- 3 Tbsp. olive oil
- 1 c. onions, chopped
- 1 c. red and green peppers
- 1 c. celery, diced
- 4 - 5 Tbsp. flour
- 2 - 3 c. chicken broth
- 1/2 c. milk
- 1 c. sour cream/yogurt
- 2 Tbsp. oregano or dill
- salt and pepper to taste
Directions

1Chop and dice all vegetables.

2Cook in olive oil until soft. Coat with flour and brown 2-3 minutes until truly browned.

3Add 5 cups of liquid all at once.

4Stir until boiling and thickened. Reduce heat, add smoked salmon (cut into small pieces), oregano or dill and salt and pepper.

5Cook until well heated.

6Add raw salmon for the last 5 minutes of cooking.

7Add sour cream just before serving.

8Garnish with parsley.
