Salmon Croquettes

- 1 (1 lb.) can red salmon
- milk
- 1/4 c. butter or margarine
- 2 Tbsp. minced onion
- 1/2 c. all-purpose flour
- 1/4 tsp. salt
- 3/4 tsp. Tabasco sauce
- 1 Tbsp. lemon juice
- 1 c. (approximately) packaged corn flake crumbs, divided
- Tabasco Tartar Sauce (see recipe)
Directions

1Drain liquid from salmon into measuring cup; add milk to make 1 cup liquid.

2Melt butter in saucepan. Add onion and cook until tender, but not brown.

3Blend flour, salt and Tabasco sauce.

4Add milk mixture and cook, stirring constantly, until thickened. Flake salmon and add to sauce with lemon juice.

5Stir in 1/2 cup corn flake crumbs.

6Refrigerate until chilled.

7Divide mixture into 8 or 10 portions; shape each portion into a cone.

8Roll cones in remaining 1/2 cup corn flake crumbs to coat well.

9Place on greased baking sheet.

10Bake in a 400° oven for 20 to 25 minutes until golden brown.

11Serve croquettes with Tabasco Tartar Sauce or a commercial tartar sauce.

12Yields 8 to 10 croquettes.
