- 1 large can salmon
- 2 c. mashed potatoes
- 1 egg, slightly beaten
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- fine, sifted bread crumbs
Directions

1Remove bones and skin from salmon; mash with fork.

2Add potatoes, salt, pepper and beaten egg.

3Mix well.

4Form into cutlets.

5Roll in crumbs.

6Heat oil and fry.

7Drain on absorbent paper.
