  • 8 oz. red or pink salmon
  • 1/2 c. low-fat cream or Ricotta cheese
  • few drops of lemon juice
  • pinch of mace or ground nutmeg
  • 1/4 tsp. Tabasco sauce
  • salt and pepper to taste
  • 2 Tbsp. plain yogurt
  • 4 small pickles

    Take out bones.

    Make a paste.

    Beat cheese until smooth.

    Add salmon, lemon juice, seasoning and fromage; mix well.

    Divide equally between 4 custard cups.

    Smooth the surfaces.

    Slice and decorate with pickles.
