- 14 cup finely crushed butter flavored cracker
- 14 cup finely chopped pistachio nut
- nonstick cooking spray
- 1 lb salmon fillet, skin removed and cut into fingers (strips)

1Preheat the oven to 350F.

2Coat a rimmed baking sheet with nonstick cooking spray.

3In a shallow dish, combine the cereal, crackers, and nuts; mix well.

4Lightly coat the salmon fingers with nonstick cooking spray then dip in the cereal mixture, coating completely.

5Place on the baking sheet and lightly coat with cooking spray.

6Bake for 10 to 12 minutes, or until the fish flakes easily with a fork.
