  • 1 (16 oz.) can flaked salmon
  • 1/4 c. lemon juice
  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 2 c. milk
  • 2 Tbsp. minced onion
  • 1/4 c. celery, chopped
  • 2 eggs, beaten
  • 1 c. dry bread crumbs
  • 1 c. peas

Directions

    Add lemon juice to salmon; set aside.

    In saucepan, melt butter, then blend in flour, salt and milk.

    Cook to a smooth sauce.

    Add onion, celery, eggs, bread crumbs, peas and salmon. Bake at 350° in greased 9 x 5-inch loaf pan for 45 minutes.
