Salmon Loaf

Ingredients

  • 1 (16 oz.) can red salmon, drained
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 3 eggs, separated
  • 8 salted crackers, crushed
  • pepper to taste

Directions

    Mix all ingredients, except for egg whites. Beat whites until stiff and fold into mixture.

    Place in greased loaf pan and bake in 350° oven for 45 minutes or until brown and crispy.

    Excellent served with buttered noodles and a green vegetable.

    Very colorful plate.
