- 2 (16 oz.) cans salmon
- 2 eggs
- 1 1/2 c. liquid
- 2 tsp. chopped onion
- milk
- 1/4 tsp. pepper
- 2 Tbsp. lemon juice
- 3 c. coarse cracker crumbs
- 1/4 tsp. salt
Directions

1Flake and remove bones and skin from salmon.

2Blend in eggs. Stir in liquid from salmon plus milk to make 1 1/2 cups.

3Stir in remaining ingredients and mix thoroughly.

4Spoon into greased 9 x 5 x 3-inch loaf pan.

5Bake at 350° for 45 minutes.

6Makes 8 servings.

7If desired, the lemon juice may be omitted.
