- 2 c. salmon
- 1 egg, beaten
- 1 c. grated Velveeta cheese
- 1 c. soft bread crumbs
- 1 Tbsp. grated onion
- 1 Tbsp. melted butter
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Drain salmon; reserve liquid.

2Remove skin and bones, keeping meat in large walnut-sized chunks.

3Combine salmon and remaining ingredients with hands, taking care not to break salmon pieces. Add reserved salmon liquid.

4Place in buttered casserole; set casserole in pan of water.

5Bake at 350°.

6Serve with baked potatoes, green beans, cabbage salad and corn bread.
