Salmon Loaf

Ingredients

  • 1 lb. can salmon
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. all-purpose flour
  • salmon liquid plus sufficient milk to make 1 c.
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. onion, minced
  • 2 c. bread cubes
  • 1 egg, beaten

Directions

    Heat oven to 350°.

    Drain canned salmon, saving liquid. Remove skin and bones.

    Mix salmon in large bowl with bread cubes. Make white sauce by blending butter or margarine with flour over medium heat.

    Add the 1 cup liquid and cook, stirring frequently, until thickened.

    Remove from heat and add beaten egg, onion and seasonings; blend well.

    Add the white sauce to the salmon and bread cubes; mix together well.

    Place in a greased loaf pan; bake uncovered for one (1) hour.

    Serves 4 to 6.
