  • 1 lb. can salmon
  • milk
  • 1 egg
  • 1 1/2 c. whole wheat bread crumbs (cheese cracker crumbs)
  • 2 tsp. lemon juice
  • 1 tsp. onion, chopped
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

    Drain salmon into measuring cup. Add enough milk to salmon liquid to make 3/4 cup. Flake salmon, removing skin. Blend in egg. Stir in rest of ingredients. Spoon into lightly greased loaf pan or 1-quart baking dish. Bake 45 minutes at 350°. If you can mash the salmon bones and add to the mixture, your family will obtain additional calcium. Usually these are soft and easily mashed. Serves 4 to 6.
