Ingredients
- 1 (16 oz.) can salmon
- 3/4 c. skim milk
- 2/3 c. cooked rice
- 2 Tbsp. margarine
- 2 egg yolks, beaten
- 2 Tbsp. chopped bell pepper
- 1 tsp. minced garlic
- 1 small onion, chopped
- 1 Tbsp. lemon juice
- 2 egg whites, stiffly beaten
Directions

1Drain salmon; save liquid.

2Heat milk and add rice; let stand 5 minutes.

3Add salmon liquid and beat until smooth.

4Add egg yolks, green peppers, onions, lemon juice and salmon.

5Mix well. Fold in egg whites.

6Pour into a well-greased loaf pan.

7Bake in 350° oven for 40 to 50 minutes, or until firm in center.

8Remove from oven and let stand 5 minutes. Loosen from sides with spatula and invert on serving platter.
