Salmon Loaf

Ingredients

  • 1 (16 oz.) can salmon
  • 3/4 c. skim milk
  • 2/3 c. cooked rice
  • 2 Tbsp. margarine
  • 2 egg yolks, beaten
  • 2 Tbsp. chopped bell pepper
  • 1 tsp. minced garlic
  • 1 small onion, chopped
  • 1 Tbsp. lemon juice
  • 2 egg whites, stiffly beaten

    Drain salmon; save liquid.

    Heat milk and add rice; let stand 5 minutes.

    Add salmon liquid and beat until smooth.

    Add egg yolks, green peppers, onions, lemon juice and salmon.

    Mix well. Fold in egg whites.

    Pour into a well-greased loaf pan.

    Bake in 350° oven for 40 to 50 minutes, or until firm in center.

    Remove from oven and let stand 5 minutes. Loosen from sides with spatula and invert on serving platter.
