Ingredients
- 1 1/2 c. cooked salmon or canned, flaked
- 2 boiled potatoes, diced
- 2 Tbsp. green, yellow and/or red sweet peppers, chopped
- 1/4 c. onion, chopped
- pinch of cayenne pepper
- salt and pepper to taste
- 2 Tbsp. parsley, minced
- 3 Tbsp. olive oil
- 1/4 c. heavy cream
Directions

1In a bowl, combine all ingredients, except olive oil and cream.

2In a skillet, heat olive oil.

3Add salmon mixture and flatten with back of a spatula.

4When the mixture begins to develop a crust on the bottom, flip over with spatula.

5Add cream and turn up heat to thicken sauce and brown other side quickly. Garnish with avocado slices and add salsa to taste.

6Makes 2 servings.
