Salmon Mousse

Ingredients

  • 1 envelope gelatin
  • 1/2 c. water
  • 1 lb. red salmon
  • 1 c. grated cucumber
  • 1/4 c. lemon juice
  • 1/2 c. mayonnaise
  • dash of Tabasco
  • 1/2 c. heavy cream, whipped
  • parsley, dill, lemon slices for garnish

Directions

    Dissolve gelatin in water.

    Combine with salmon, cucumber, lemon juice, mayonnaise, Tabasco and whipped cream.

    Mix well. Pour into a greased 5-cup mold.

    Chill until firm.

    Turn out onto a platter and garnish with parsley, dill and/or lemon slices.

    Serve on crackers or rye bread.
