- 2 lb. canned salmon
- 1 1/2 c. chicken broth
- salt and pepper to taste
- 1 tsp. lemon juice
- 3/4 pt. whipped cream
- 2 Tbsp. unflavored gelatin
- 3/4 c. mayonnaise
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. onion juice
Directions

1Finely mince salmon.

2Soak gelatin in 1/2 cup cold stock.

3Add 1 cup boiling stock; stir until dissolved.

4Cool.

5As gelatin thickens, add the mayonnaise.

6Beat until frothy.

7Add salmon and seasonings.

8Fold in cream.

9Pour into fish mold.

10Chill until firm.

11Serve on shredded lettuce with cucumber sauce.
