Ingredients
- 1/2 lb. salmon steak or fillet
- 1 small lemon
- 2 tsp. minced garlic
- 2 doz. Calamata olives
- 2 Tbsp. fresh minced parsley
- 1 Tbsp. capers, rinsed
- 1/8 c. virgin olive oil
- salt and pepper to taste
- egg noodles (for 2)
Directions

1Cut up salmon into 1/4-inch pieces.

2Peel lemon.

3Remove all white pith and chop.

4Pit an coarsely chop olives.

5Saute the salmon in hot oil.

6Season with salt and pepper, if desired.

7Add garlic, lemon, olives and capers.

8Reduce heat.

9Salmon will cook in about 2 minutes.

10Make sure it does not overcook.

11While fish is cooking, cook pasta al dente.

12Drain pasta.

13Toss into fish mixture.

14Add parsley and toss.

15Taste for salt.

16Garnish with freshly ground pepper.
