  • 1 (7 ounce) can salmon (cosco brand)
  • 12 cup fat-free cottage cheese, small curd
  • 2 tablespoons Miracle Whip (or mayo)
  • 1 teaspoon dried parsley
  • 12 teaspoon pepper
  • 4 flour tortillas
  • 4 romaine lettuce leaves
  • 4 slices tomatoes (optional)

Directions

    Drain salmon, add cottage cheese, Miracle Whip (or mayo), pepper and parsley.

    Cover and let sit in fridge for at least 30 minutes or overnight.

    To assemble, take flour tortillas and warm in in microwave for at least 10 seconds.

    Place one piece of romaine lettuce on tortilla, spread on salmon mixture, top with tomato, roll up and cut in half.

    Serve with carrot sticks and low-fat ranch dressing.
