Salmon Salad

Ingredients

  • 6 ounces smoked atlantic salmon
  • 2 large hard-boiled eggs, sliced
  • 2 heads radicchio (approximately twenty leaves)
  • 14 head red leaf lettuce
  • 14 head bibb lettuce
  • 1 bunch romaine lettuce hearts
  • 14 cup fresh basil leaf
  • 14 cup fresh parsley, chopped
  • 4 tablespoons shredded parmesan cheese

Directions

    Wash and dry greens.

    Shred, sala-style, into large bowl.

    Shred salmon with a fork and add to the greens.

    Add sliced egg, tomatoes and parmesan and toss.

    Serve cold.

    For dressing try Honey-Mustard Vinigrette with Dill.
