- 1 (15 1/2 oz.) can salmon
- 1 (10 oz.) pkg. frozen peas (in cream sauce)
- 1/4 c. celery, chopped
- 1 (4 oz.) can sliced mushrooms, drained
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 c. prepared mashed potatoes
- 2 tsp. instant minced onion
- grated Parmesan cheese
Directions

1Drain and flake salmon.

2Prepare frozen peas as directed on package.

3Combine celery, salmon, mushrooms, salt and pepper with cooked peas.

4Stir onions into prepared potatoes; mix well.

5Spoon salmon mixture into greased 2-quart casserole.

6Spoon potatoes on top.

7Sprinkle with Parmesan cheese.

8Bake at 350° for 20 to 25 minutes or until potatoes are lightly browned and casserole contents bubble.
