Salmon Spaghetti

  • 1 1/2 c. sliced mushrooms
  • 1/4 c. sliced green onion
  • 2 Tbsp. butter
  • 1 (15 1/2 oz.) can salmon, undrained
  • 1/2 c. white wine
  • 8 oz. plain yogurt
  • 2 Tbsp. cornstarch
  • 1/8 tsp. pepper
  • dash of parsley
  • dry garlic to taste
  • 1 lb. spaghetti, cooked as directed on pkg.
  • grated Parmesan cheese

Directions

    Saute mushrooms and onion in butter until tender.

    Add undrained salmon and wine; simmer for 3 minutes.

    Stir yogurt, cornstarch, pepper, parsley and garlic together; add to skillet and cook for 3 minutes.

    Serve over cooked spaghetti; sprinkle with grated Parmesan cheese.
