- 1 (15 1/2 oz.) can salmon
- 8 slices bread
- 1/2 lb. sharp Cheddar cheese, shredded
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 4 eggs
- 2 1/2 c. milk
- 1 Tbsp. chopped onion
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1/4 tsp. dry mustard
Directions

1Drain and flake salmon, reserving liquid.

2Trim crusts from 5 slices of bread, cut in half diagonally.

3Use remaining 3 slices and trimmings to line bottom of baking dish.

4Sprinkle with 1/3 of cheese.

5Spread flaked salmon over cheese.

6Spread spinach over salmon.

7Sprinkle with 1/3 of cheese.

8Arrange bread triangles, overlapping on top of cheese.

9Beat eggs; add milk, onion, spices and salmon liquid.

10Pour over top.

11Cover and refrigerate for at least one hour.

12Bake for 1 hour at 325°.

13Sprinkle with remaining cheese and bake 5 minutes more.

14Let stand 5 to 10 minutes before serving.
