- 1 c. salmon (large size)
- 1/4 c. butter
- 1/2 c. flour
- 1 egg
- 1 qt. sweet milk
Directions

1Pick and remove bones from salmon.

2Make a white sauce by mixing butter and flour together and adding one well beaten egg and the milk.

3Cook until it thickens, stirring often.

4In a baking dish, arrange alternate layers of salmon and white sauce. Cover the top with rolled cracker crumbs; dot with butter and a few tablespoons of milk.

5Bake in a hot oven for about 25 minutes.
