Ingredients

  • 8 large tomatoes
  • 6 green peppers
  • 6 jalapeno peppers
  • 4 c. onions, chopped
  • 2 cloves garlic
  • 1/4 c. salt
  • 1 1/2 c. vinegar or less
  • 3/4 c. sugar or less
  • 2 (6 oz.) cans tomato paste
  • 1 (15 oz.) can tomato sauce

Directions

    Place chopped tomatoes, peppers, onions, garlic and salt in crock.

    Let stand for 10 to 12 hours, preferably overnight.

    Boil vinegar and sugar until sugar is dissolved.

    Mix in tomato paste and tomato sauce.

    Add all other ingredients.

    Bring to a boil and boil only 5 minutes.

    Yields 10 to 12 pints.
