Ingredients

  • 3 large cans diced tomatoes (use juice too)
  • 3 bunches green onions, sliced thin (include 1/2 of tops)
  • 1 green pepper, chopped fine
  • 3 (4 oz.) cans chopped green chiles
  • 12 cloves garlic, chopped
  • 1 Tbsp. each: salt, sugar and vinegar
  • 1 Tbsp. coriander or cilantro
  • 6 Tbsp. olive oil

Directions

    In olive oil, saute onions, pepper and garlic until tender, but not brown. Add all other ingredients. Refrigerate. Serve with tortilla chips. Yield: 3 quarts.
