- 3 large cans diced tomatoes (use juice too)
- 3 bunches green onions, sliced thin (include 1/2 of tops)
- 1 green pepper, chopped fine
- 3 (4 oz.) cans chopped green chiles
- 12 cloves garlic, chopped
- 1 Tbsp. each: salt, sugar and vinegar
- 1 Tbsp. coriander or cilantro
- 6 Tbsp. olive oil
Directions

1In olive oil, saute onions, pepper and garlic until tender, but not brown. Add all other ingredients. Refrigerate. Serve with tortilla chips. Yield: 3 quarts.
